This is my pesto recipe; in one of my previous posts I talked about how much I enjoy cooking with pesto sauce, especially when I am busy or too hungry and don’t have the time to prepare dinner. I always have a bottle of freshly made pesto and Parmesan cheese in my fridge, so all I then need to do is boil water to cook pasta and prepare my salad. Voila I have dinner ready to eat in a matter of minutes! Here is my pesto recipe and in the next post you will find an Italian Style Spaghetti Bolognese, where I used the pesto sauce as a spread to go on the baguettes.

- 1 bunch fresh basil
- 25g pine nuts
- ¾ cup shredded cheese
- Pinch of salt
- 4 Tablespoons Olive oil
- Rinse the basil in cold water.
- Place the garlic, basil, pine nuts and cheese into food processor and process, until smooth gradually adding in the olive oil until all of the olive oil is combined.
